Spicy Sweet Potato Soup

This isn’t my picture, and if you click on the link it won’t be my recipe either, but the soup I made tonight was yummy and quick!  If I had used a picture of mine, it would have been the glorious dribbles of it on Tessa’s belly (which she dutifully scraped up with her spoon and put in her mouth, so well trained).
3 lg sweet potatoes
2 TB butter
1 onion
2 cloves garlic
4 cups chicken stock (enough to cover sw pots)
1/2 tsp cumin
1/4 tsp red pepper flakes
1/2 tsp garam masala (opt)
2 TB fresh ginger
juice of one lemon
cilantro for garnish
dollop or two of sour cream

Melt butter and saute onion and garlic. Add sweet pot’s and chicken stock. Season and bring to boil and simmer for 15 min. Add lemon juice. Blend smooth with stick blender, add sour cream and blend, or save for garnish along with cilantro.
It’s nicely spicey and creamy! Two out of three of my kids gobbled it down. I’m still working on #3 to get her to eat it, I served it with a salad to make it more summery. Yum-mo!
